Beef Stir-Fry with Roasted Potatoes

For the stir-fried beef:

500g beef steak (rump steak, sirloin or ribeye), cut into strips;
2 tablespoons olive oil;
2 tablespoons butter; 2
cloves garlic, minced;
1 teaspoon smoked paprika; 1 teaspoon
dried thyme;
1 tablespoon soy sauce;
1 teaspoon Dijon mustard (optional);
salt and black pepper to taste;
1 tablespoon chopped fresh parsley
